Meal planning is my thing! It’s one of my most popular video topics over on my Youtube Channel. But even I get stuck in a rut sometimes when it comes to meal planning!
I think we all get into he habit of rotating the same meals over and over and its no wonder that when we find something the whole family will eat that we stick to what we know is a safe choice. But every once in a while I get that itch to try something different and that’s when I get my thinking hat on, hit the recipe books and try to come up with some twists on the old favourites in our house!
Which is what brought me to the idea of Lamb tacos!
I know the kids love tacos! Theres something about creating your own taco, with all the many components, that’s so interactive and child friendly!
Our go to meats tend to be chicken breast and minced beef and they form the base of 90% of our family meals however there’s so many other choices available out there and your local butcher is a great place to get inspiration and also advice!
I decided I would try making tacos with a different meat from my usual minced beef and thought the flavour of Scotch lamb would work perfectly with the Cajun seasonings.
My local butcher was happy to advise me on how much I’d need and how best to cook it and I was surprised to find the cost of Scotch lamb mince wasn’t any more expensive than minced beef. you can find many more delicious recipes that can be prepared in less than 30 minutes over on the Scotch Kitchen website! www.scotchkitchen.com
I started with some Scotch Lamb PGI from my local butcher, and browned it with some chopped onions. I then added my taco seasoning (I cheated and used a ready prepared blend of spices) along with a can of beans. You can use any beans but I used good old baked beans, any brand will do! I also added 100ml of water and left the meat, beans and spices to simmer in the pan covered for 20 minutes.
While my meat was cooking I got to work preparing the accompaniments. I chose lettuce, tomatoes and sliced peppers. I also prepared a simple guacamole by mixing avocado, lime juice and some chilli flakes. I warmed some soft flour tortilla “boats” for our tacos which are great fun for the kids and also a really practical solution for preventing the fillings spilling out when eating.
And its as simple as that!! I like to dish up all the components separately and let everyone make their own tacos!

Tasty Scotch Lamb Tacos!
- 500 g Scotch Lamb Mince
- handful chopped onion
- 1 can beans I used baked beans but you can use whichever means you prefer.
- 1 packet Taco seasoning
- 100ml water
- Selection of salad accompaniments I uses lettuce, tomatoes and peppers.
- Lime to serve
- Tacos or Tortilla "boats"
Brown your lamb mince along with a handful of chopped onion.
Once browned add a can of beans, 100ml water and a sachet of taco seasoning.
Leave to simmer over a medium heat for 20 mins.
While your meat and beans are cooking prepare your choice of salad accompaniments.
Serve with your choice of Taco shells or soft tortilla "boats", some salad and a slice of lime!
